A sharpening tool gives only the angle and a 100% flat edge that can be repeated. My tools give also convex edges with wanted angle on the cutting edge and wanted convex degrees - and this can also be repeated.
The sharpeners used together with the tool gives the sharpness (if you use them as they shall be used).
Depending on the knifes purpouse the sharpening process can ends in any wanted grit/micron.
The most important thing in sharpening is the knowledge of the process in use.
I constructed my sharpening tool Chef for 15 years ago. It then has 16 brand new constructions bulit in. Some of them have been copyed, for example magnetic grindingtables, adjusting for sifferent blade width, built in protractor, fixed distance between the cutting edge and the pivot point and convex edge sharpening with wanted angle on the cutting edge and wanted degrees on the convex sphere.
Chef are still, after 15 years, the most advanced knfe sharpener.
The most advanced sharpener, all katagories, are my tool IcePal that sharpens ice drills (augers). It looks like crap - but IcePal sharpens 3 dimensional edges, all three dimensons at the same time. A knife edge has only 1 demension on their edges - and people jave peoblem to get them sharp. Ice drills have 3 dimension edges...
The most wonderful thing is that no edge experta can tell their opinion about the quality of the edge - only the ice can tell the quality. The ice drill, after been sharpened with IcePal drills a hole in the ice - or not. There is nothing in between. It works - or it so not work. Only the ice can tell
I have made IcePal for soon 20 years now, and no complains.
So, knowhow of sharpening, knowhow of sharpening tools and knowhow of sharpeners and how they work - that gives flat (or convex) edges in wanted degrees and wanted sharpness. In my way of thinking any way
By the way...i have been thick in 4 years now. It started with cancer and after that come a lot of other thicknesses becouse of my lack of imune defence that the cancer medicine take away...
I start to be better now, got some power back now. It started dor a year ago, and suddenly, over night, i got turbo effect power
at last it fellt like that. I can work again, half day - but that is a good start.
My wife also get cancer the same week as I got it. She is still struggeling with her cancer after 5 sergery and sergery 6 are waiting. She will survive her cancer, that is nice to know.
