It is the juices from the skin when it is not ripe (so green or partly green bananas) that have this effect in my experience.

I noticed when using carbon knives many would go black instantly if used to open a less than ripe banana. So not rust, but a bit like chemical blacking (or bluing). Very stainless steel had no such reaction even if left for some time.

Once bananas are ripe and spotty, this does not happen.

Maybe it has been an oddity of the knives I had, but fruit in general tends to be very acidic and corrosive. I've seen the tang of stainless folding knives (once taken apart) horribly pitted due to cutting oranges.
