I'm always up for a bit of philosophy. Of course there is truth in that fact, but like all facts it can be interpreted however we like. I was directly relating experience to knowledge, an assumption that is also flawed, as proven by your post :-P
Apart from the knife collectors I know, I actually don't know anyone that is able to sharpen a knife (properly, not with a pull through), despite being people that use a knife almost every day of their lives. Considering this is one of the human race's most basic and important tools I find this lack of interest strange. But then I know people think I'm strange.
