I'd actually have expected that to be the other way around, with a less experienced knife user expecting a new knife to be sharp and perhaps struggling to get a good edge back onto it, whereas more experienced users want to put their choice of edge on it, so not caring what the factory edge is. I tend to change most of my edge bevel angles to a 30 degree inclusive.

Either way though I think a knife should be properly sharp out of the box. Morakniv are reliably consistent in their edges, more so than any other I've tested. Spyderco manage many outstanding edges, but also have a few not so good.

I'd agree on the 150-200 BESS, and when I re-edge a knife, my standard method gives me a 200 or better edge, with 200 being my threshold (it must be below).
