What is proper sharpness?

Sometimes also I do not follow what I preach.... When I am on Fairs there is allways people that challench me to freehand sharpen a edge to scarry sharp - they think that I can not do that becouse I make sharpening tools...

i have no problem with scarry sharp edges - when they are needed.
