Interesting comment. Pete. Sometimes 'how' is easier to answer than 'why'.
I am normally a thrifty person with simple tastes. Sharpening is my splurge. While wiser persons might hesitate due to price, I give my curiosity a little freer rein with sharpening. The variable speed motor may or may not prove of value.
In my case, a larger belt grinder would not be practical. I am not a knife maker. We are both trying to learn more.
