Having a tach sounds just as good as having a reverse switch that Ken mentioned. It seems to me that my motor randomly speeds up and slows down without any noticeable tension from the belt.
I've sharpened 200+knives so far and a few other random things with the Penn/Viel combo and now wonder more than ever what speed, what belt and what direction to work. Belt rotating into the edge on the platen start to finish or platen first and reverse rotation and strop slow away from the edge on the slack part. The slower speed certainly helps me relax more in these warmer months!
