Mr. Grepper, shortly after 6:00 it is mentioned that they use glazing wheels. In my thinking such a stropping disc can be made of pure wool or some synthetic replacement.
For me stropping without any compound is blade burnishing. Burnishing is different from abrasion and refers to movement of metal towards the edge. Burnishing can heal some minor defects of the edge. From the metallurgical point of view it is plastic flow.
