I shape my turning tools on a 6-inch grinding wheel (using the Tormek jigs) and then sharpen on the Tormek (HSS is way, way too slow to shape on the Tormek). I've never worried about the heat much, since I shape with a coarse wheel (40 grit, I think), and HSS doesn't seem to detemper easily - my guess is that the edge actually gets hotter while turning than while shaping (I've seen a wire-burn technique for turning, where a wire is held in a groove on the spindle being turned, and it burns the wood in a matter of seconds).
