Mr. KG, I'm not understanding what exactly you are saying when you say, "In real life you have to even out the bevel on each side before you can work on the edge as such..." Note that I had previously said, "but as long as the edge is evenly ground from each side the burr should be no larger than with less sharpening."
How does one "even out the bevel on each side" unless it is ground from each side? Hopefully I'm not missing the obvious!
