When it comes to my own cutlery, it seems the older I get the less fussy I am. As you say; no muss, no fuss, no angst. If it's nice and sharp, toothy and reasonably well deburred, I'm happy. When they dull, and they will, sharpening is quick, easy and something I actually look forward to and enjoy.
