We prefer the edge that Grepper's wife was using before he took it away from her. Look at the microscopic picture; humps, bumps, hills and valleys. A very interesting knife compared to the featureless edge that Grepper replaced it with.
On the serious side, Grepper has it figured out when it comes to sharpening kitchen cutlery. No muss, no fuss no angst. Just consistently sharp and serviceable edges produced in a very short period of time.
We still covet your wife's knife though. Notice that beautifully rolled edge? That is something we find very difficult to duplicate in a laboratory setting. Edges that look like that are a dime a dozen in America's kitchen knife block but recreating it artificially for test purposes is very difficult to do. At least for us.
