Questions - Tormek T-2
#2
Rupert,

Good questions. I am not exactly sure of what "P" means. Tormek states that the two diamond wheels have 600 and 320 grit. The standard wheel, classified as DWF-200, which comes with the machine, is the 600 grit. The DWC-200 320 grit is an optional extra. The 200 is Tormekspeak for 200 mm diameter.
(the diameter for the T2 and T4) I think the letters mean Diamond Wheel Fine or Coarse.

Tormek's plan is to use the 600 grit for sharpening and use the rubber honing wheel for honing. This is designed for restaurant use, presumably with relatively untrained staff. Tormek does not pretend that it will be a substitute for a regular machine for a professional sharpener or a sharpener who sharpens more than kitchen knives.

Mine just arrived. I have used it once with essentially acceptable results. The results will certainly not meet what I would expect from members of this forum, although my BESS numbers are in the new knife range.

Frankly, I would hold off purchasing one until we know more.

The knife jig might possibly work with a Viel or Kallie, but only with a custom machined bracket.
